Wine production
Fermentation: a very long  maceration in steel ( about 4 months)
Refinement: 24 months in tonneaux, 6 months in steel and then 18 months in bottles.
Bottling: no stabilizing procedure and no filtration.

Alcoholic content: 14,5% vol.

Organoleptic features
Colour: very dark garnet.
Bouquet: a wide, elegant aromatic range, with mixed tastes of graphite, coffee and tobacco.
Taste: strong, rich in tannin, round, tasty and closed by a long, dry and thin ending.

Modality of service
Serving temperature: 18°C.
Courses: mushroom- based dishes, red meat, game and ripe cheese.
